This new location pays tribute to the history of the Cooper’s Hawk brand and the individuals who helped it grow to what it is today. Before Cooper’s Hawk, founder Tom McEnery worked with family-owned winemakers Lynfred Winery in Roselle, IL. At Lynfred, Tim gained first-hand experience in the wine industry, the production process, and the elements which make a phenomenal guest experience.

After collaborating with Lynfred Winery on a 2023 anniversary wine called “A Taste of Where it All Began,” Cooper’s Hawk used this location to pay homage to their shared history. Marked by a plaque in a place of honor in the tasting bar, the entire space was inspired by the journey Cooper’s Hawk and Tim McEnery have made in the nearly two decades since those early days at Lynfred Winery. The design team approached this project with that sense of tribute in mind, looking to honor the classic winery roots of the Cooper’s Hawk brand while also looking forward to the concept’s expanding future. Pursuing a modern-rustic aesthetic, the moody space is clad with sleek, dark finishes and tactile elements. A wooden die-cut wall frames a window offering a peak into the kitchen, mimicking the underlying motion and activity in the heart of the restaurant. This design creates a grounded backdrop for a guest experience – an atmosphere which embodies Cooper’s Hawk at its finest.

Sleek linear wooden slats are used to encapsulate the central booths in the main dining room creating a sense of space within a space. The linear lines draw the eye through the room and create a dynamic textural statement feature and intimate sections while keeping the open space of the dining room intact.
The tasting bar is framed by an intricate barrel stave ceiling feature, highlighting the meticulous process of crafting wine and transporting guests into the Cooper’s Hawk cellars.
This project was all about bringing patrons in to the wine-making experience. We wanted the environment to tell the story – to illustrate the craftsmanship and passion that goes into making wine.
